Quick and Easy Chicken and Pasta

We all have those nights when we realize we didn’t take anything out of the freezer to cook and you don’t want to order substandard pizza.

Here is a recipe for one of those nights.  Boxed pasta salad, can of chicken, frozen veggies, cheese, and greek yogurt (or sour cream).  That’s it.  Served with some sort of salad, and poof, dinner is ready.

  • Cook pasta from the salad as directed on the box.
  • While the pasta is cooking, add the frozen vegetables to the strainer and rinse with hot water. You will be surprised how quickly they will thaw out. When the pasta is cooked, strain over the rinsed frozen vegetables. Mix and add back into the pan you cooked the pasta in.
  • In a small bowl, place your cup of plain greek yogurt, the seasoning packet from the pasta salad mix, and the cheese. Mix well.
  • Add the yogurt mixture to the pan over the pasta/vegetable mixture. Add the can of drained chicken. Turn the stove to low and stir until the chicken is hot and the cheese is melted. This should take approximately 5 minutes.
  • Serve with a salad, and you have a quick, easy, and I must say, delicious dinner.
