Greek Meatball Sandwich

As I have mentioned before, we are trying to do the Mediterranean diet here at Starkey's on the Hill.  Here is my version of pita sandwiches with Greek meatballs with tzatziki sauce.  To be more diet friendly (I served ours with chips) a salad would go great with this sandwich.

  • 3 chicken breast halves (Chopped and ground)
  • 1/2 bell pepper (finely chopped)
  • 1/2 yellow onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1/2 cup bread crumbs
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp granulated garlic powder
  • 1 tsp granulated onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp cinnamon
  • 1/2 cup milk
  • 1 egg (beaten)
  • 1/2 cup feta cheese
  • Cucumber Sauce
  • 2 cucumbers (seeded and finely chopped)
  • 3 cloves of garlic (minced)
  • 1/2 tsp dry dill
  • 1 cup greek yogurt
  • 1/2 cup mayonnaise
  • 1 tsp salt
  • 1 tsp pepper
  • Sandwich
  • 4 whole wheat pita (cut in half)
  • 2 tomatoes (sliced)
  • 1 cucumber (sliced)
  • 1 small head of romaine lettuce (chopped)
  1. Cut up the chicken breasts. I used a food processor to grind the chicken. If you do not have a food processor or a food grinder, you can always purchase 2 pounds of ground chicken. The texture will be different, but delicious all the same. Place the ground chicken in a medium sized bowl.
  2. Finely chop the onion and the bell pepper. I used red sweet bell pepper, but feel free to use green, yellow, or orange. Want to give it a kick, replace with some poblano or Anaheim peppers. Add the onion and bell pepper to the bowl with the ground chicken.
  3. Add all the spices, bread crumbs, milk, feta cheese, and beaten egg to the bowl. Mix well. Although messy, I find my hands to be the best mixer for ground meat.
  4. I used a large cookie scoop to make meatballs the size of a golf ball. After scooping all the ground meat mixture on to a foil lined baking pan (sprayed with pan spray), wet your hands and form the meatballs into a ball shape. Place into a 400 degree preheated oven for 30 minutes.
  5. Making the Sauce
  6. Peel and seed the cucumbers. If you haven't seeded a cucumber, its pretty easy. After peeling, cut the cucumber in half length wise. Use a spoon to scrap out the seeds. Finely chop the cucumber and add to a medium serving bowl. Add the remaining sauce ingredients. Stir to combine and set aside.
  7. Assembling the Sandwiches
  8. Slice the tomatoes, cucumbers, and lettuce. I chose to seed the cucumber, but just a personal choice. I cut two or three meatballs in half. I had smaller pita breads and could only fit two halves into each half of the pita bread. Place the cucumbers, a couple slices of tomato, and lettuce into each half of pita bread.
  9. Top with the cucumber sauce and enjoy!!
