Leftover Gravy

Just a quick post, no real recipe, but a fantastic tasting gravy I made last night and I thought I would share it with you.

I had promised to make my oldest son a new type of eggs benedict before we went fishing yesterday. That recipe will be posted later this week when I make it again with measurements.

I used regular dry packaged hollandaise sauce. As usual, I overestimated how much I would actually use and made two packages, leaving a lot leftover. For dinner, I pressure cooked a whole chicken, using a quarter cup of water in the electric pressure cooker. If you have ever used an electric pressure cooker, you know you will have close to two cups of liquid in the pot when done. I added those juices to the leftover hollandaise sauce, juice from a third of a lemon, then thickening the thin sauce with a cornstarch slurry.

Picture a famous ex Star Trek star saying his signature “Oh My.” Recipes will follow later in the week with full measurements and pictures, but felt this was one of my favorite shortcuts and had to be shared.
